What You'll Do:

As a Food Controller, you will carry out our Mission of Love by planning, organizing and directing the personnel and activities of purchasing, receiving, storage, and dispatch of the food, supply and equipment. Supporting and training essential personnel who are responsible using CI for purchasingOur Food Controllers are responsible for the following:

  • Plan and direct the activities and systems employed for establishing purchasing specifications, the purchasing process and cycle, product evaluation and analysis, as well as establishing par stock levels based upon purchasing process requirements.
  • Maintain 98% or higher distribution to Dietary or fill rate to all other CAC clients.
  • Receives deliveries. Carries or conveys by hand truck items from the receiving area to the storeroom, coolers, and freezers. Unpacks items, inspecting them for damage or defects and verifies the accuracy of the shipment with information on the invoice or packing slip and purchasing order. Secure items in the supply room until they are issued. Affixes date and price labels to specified supplies.
  • Responsible for all label, dating and rotation of foods in the Culinary Arts Center are completed daily. Maintain temperature logs and note deviations.
  • Maintains invoice files and related purchasing records. Process invoices and forwards, on a timely manner, same to Food Services Administration Office for payment.
  • Plan and direct the work systems for the delivery process and truck drivers for the department ensuring a safe and timely delivery of all foods and materials.
  • Schedules and trains all of the staff for the assigned areas of responsibility. Researches product availability and secures samples and pricing as requested by Food Production Manager.

What You Definitely Have:

  • Degree from a recognized culinary program, Associate degree in Food Service/Hospitality, or equivalent training/experience.
  • Three to five years of experience in food procurement management.
  • Demonstrate ability to build relationship with both internal and external customers. Good written and oral communication skill as well.
  • Proficient in inventory/purchasing software program a must.
